Mediterranean Couscous with Sweet Onion & Crispbread

Take your taste buds on a journey to the Med. The crunch from the Crispbread mixed with the soft couscous is a sensorial delight!

Ingredients
  • 1 Ryvita® Crispbread
  • 1 cup of couscous
  • 1 cup of lightly salted boiling water
  • A few olives
  • One Vidalia onion
  • Some slices of ripe tomatoes
  • A squeeze of lemon
  • A sprinkling of fresh coriander

Directions
  1. Prepare the couscous by pouring over the boiling water. Cover and allow the couscous to swell for 5 minutes. Fluff up the couscous with a fork and add a squeeze of lemon. Stir in your sliced tomatoes, chopped onion and olives. Finish with a sprinkling of the fresh coriander. Enjoy!
