Ingredients

  1. 1 Ryvita Crispbread

  2. 1 cup of couscous

  3. 1 cup of lightly salted boiling water

  4. A few olives

  5. One Vidalia onion

  6. Some slices of ripe tomatoes

  7. A squeeze of lemon

  8. A sprinkling of fresh coriander

Directions

  1. Prepare the couscous by pouring over the boiling water. Cover and allow the couscous to swell for 5 minutes. Fluff up the couscous with a fork and add a squeeze of lemon. Stir in your sliced tomatoes, chopped onion and olives. Finish with a sprinkling of the fresh coriander. Enjoy!
